Roasted Chicken with Herbs de Provence

Serves 4
1 lg. Roasting Chicken
12 T. Sioux Z Wow Marinade
1 T. Herbs de Provence
2 T. Balsamic Vinegar
2 T. Olive Oil
To Marinate: Wash bird, (remove giblets) and pat dry. Mix all other ingredients for marinade. Blend well. Place bird in a zip top bag and add marinade and seal. Rub marinade into all surfaces. Place in fridge overnight.
To Cook: Preheat oven to 350F. Place bird in a baking dish along with the marinade. Roast for 1 ½ hr., basting every 20 min. Pierce breast to check doneness. Let rest for 10 min. before carving.
To Serve: Serve with rosemary roasted potatoes, baby carrots and peas. NOTE: This same marinade is exquisite for duck, quail and Cornish game hen.
